Cœur de Bœuf literally means: ox heart. This is a reference to the fruit shape. This tomato is a tomato type that you sometimes can to find in the supermarket or on the market, especially in southern countries. Typical for Cœur de Bœuf is the fact that the fruit colors from the inside out. Its red internal color with a green pericarp gives a very attractive appearance when cut into slices. The green-orange tomatoes are crunchier, with a slightly sour taste, while the redder fruits have a slightly fuller flavour.
