De oesterzwam is na de champignon de bekendste paddenstoel van Nederland. De vorm van een oesterzwam lijkt op die van een oesterschelp, vandaar de naam. De meest gangbare soorten zijn de bruingrijze en de lichtpaarse oesterzwam. In het wild groeit de oesterzwem op boomstammen en dood hout. Ze worden geteeld op een mengsel van stro en water.
