The parsnip
The parsnip or white carrot is a long, ivory-colored root. The flavor is intense, aromatic, somewhat sweet, and anise-like, falling between the taste of a carrot and a celeriac. Nowadays, parsnips are considered "forgotten vegetables" because they have been more or less forgotten. However, in recent years, the parsnip has been making a comeback and is becoming popular again.
