Grilled chicken breast with fresh tomato salsa
Craving a light meal? Then try this recipe for grilled chicken breast with tomato and corn salsa. Easy and healthy!
Ingredients
- 2 small chicken breasts
- 2 tbsps. of olive oil
- 4 tomatoes
- 1 small red onion, finely cut
- 1 tin of corn (200 g), drained
- Juice of 1 lemon
- 2 bunches of fresh coriander leaves or 2 tsps. of dry coriander or mint
Preparation
- Start the barbecue or heat up a grill pan. Brush the chicken breasts with olive oil and add salt and pepper. Grill the chicken breasts for 10 minutes on both sides until golden-brown and cooked.
- While doing this, cut the tomatoes into small cubes. Mix the tomato with the onion, the corn, the lemon juice and the (finely chopped) coriander or mint leaves. Add salt and pepper to the salsa.
- Serve the grilled chicken breast with the salsa.
Tip: tasty with white rice or toasted cornbread and garlic sauce.
