

Roasted corn with tomato salsa
Still looking for a side dish for the BBQ? Roasted corn in combination with the tomato salsa is a good choice!
Ingredients
- 4 cobs of corn
- 2 tbsps. of sunflower oil
- 1 red onion cut in quarters
- 3 tomatoes cut in pieces
- 1 tsp. of coriander seeds
- 1 bunch of coriander or flat-leaf parsley
- 1 clove of garlic
- 1 lemon
- A barbecue and a food processor or a hand blender with a chopper
Preparation
- Start the barbecue. Brush the cobs of corn all around with oil and grill them all around until brown and cooked in 25-30 minutes.
- Roughly chop the onion in the food processor. Add the tomato and the coriander seeds and chop until you get a rough or a fine salsa as you prefer. Press the garlic on top and add the lemon juice, salt and pepper to taste.
- Place the grilled cobs of corn on a dish. Spoon the tomato salsa on top.
Tip: Cook the cobs of corn for a shorter grilling time.
Tip: Crumble some feta cheese on top of the grilled cobs of corn.
