

Vegetarian tacos with tomato
Vegetarian tacos with tomato, bell pepper and courgettes are a delicious main dish and also easy to make and to get on the table fast!
Ingredients
- 2 onions
- 1 clove of garlic
- 1 courgette
- 1 red pepper
- 1 yellow pepper
- 2 tomatoes
- 2 tbsps. of sunflower oil
- 350 g of vegetarian mince
- 1 bag of taco seasoning mix (28 g)
- 12 taco shells
- 200 g of cut iceberg lettuce
- Oven dish
Preparation
- Preheat the oven to 150 ºC. Cut the onion into small pieces. Finely chop the garlic. Dice the courgette, bell peppers and tomatoes.
- Heat the oil in a frying pan. Fry the onion and garlic for 1 minute. Add the mince and fry it for another 2 minutes. Mix in the courgette and bell peppers and continue flying for another 4 minutes.
- Add the tomato with the seasoning mix and 100 ml of water. Slowly cook the mince with the vegetables at a low heat for 5 minutes. Heat the taco shells for 5 minutes in the preheated oven; hang the shells upside own in the oven grid.
- Fill the taco shells with the iceberg lettuce and the mince with the vegetables. Place them on a dish.
Tip: Tasty with sour cream and finely chopped coriander.
Tip: The taco seasoning mix can be replaced by 1 tsp. of ground cumin, 1 tsp. mild paprika power and salt to taste.
Prefer it with meat? Replace the vegetarian mince with ground beef or chicken breast strips.
